Dear friends... Thank you for understanding and never leave me alone. I had to take this one week brake so I could recover my energies and keep looking for the positive side of  everything in life.
 
 

My parents are back and they will stay until my birthday. So this month will be real good, for sure. It's always a party when they come.
We also have some new baby animals here. Death takes, life returns... It is really beautiful to watch this endless chain... I'll place some pictures so you can see my reason to be thankful.

Sad days...



Sorry girl... I didn't mean to hurt you. I hope you know how much I love you and miss you.

Everything is quiet and sad today... No more annoying barks and dogs chasing each other around the house. Yesterday I ran over Goldie, one of our dear doggies... We took her to the emergency... But she didn't resist. I'm totally finished.

Brazilian Recipes 3

And the 3rd round of Brazilian dishes... Are you ready?


BATIDA 3 COWS

 (batida for children)


INGREDIENTS:

3 scoops of Neapolitan ice cream

1 can of coca-cola (blackcow)
or
1 can of orange soda (yellowcow)
or
1 can of grape soda (purplecow)

 

Combine all ingredients in a blender. Mix well and serve.

Children will love this shake!

 

SERVING SIZE: 3 children or one adult.




FEIJÃO TROPEIRO





INGREDIENTS

1 kg (2lb) of pinto or kidney beans

250 g (1 cup) of cassava flour

1 kg (2 lb) variety of sausages

2 cloves of garlic, crushed

3 small sliced onions

250 g (1/2 lb) sliced bacon

2 hard boiled eggs

2 tbs of chopped green onions

 

PREPARE 

First, let 1lb of beans soaked in water overnight. It will make the beans easier to cook and make beans less gassy as well.

Drain beans and place them on the pressure cooker.

Cover beans with tap water. (Water level should be 1 inch above the beans).

Close the pressure cooker and place in medium heat.

Your beans are ready 20 minutes after the regulator starts to blow steam.

Alternatively, cook the beans in a pot for 60 minutes or until tender.

 

Strain the beans and set aside.

Place a large skillet in medium heat and fry chopped pork bacon and pieces of sausage until golden brown. Chop sausage into small pieces. Add the garlic, onions and strained beans to the fried sausages. Add the manioc meal while stirring with a wood spoon.

 

SERVE:

Remove from heat and place the beans in a large serving dish. Decorate the edges with slices of sausage, green onions and hard-boiled eggs. Serve with collard greens and white rice.

 

SERVING SIZE: 8 portions.



CAJUZINHO



INGREDIENTS:

1 can (14 oz) sweetened condensed milk

1 tablespoon margarine

1 cup of ground roasted peanuts

3 tbs powdered cocoa

 

1 cup of granulated sugar and

about 30 peanuts to decorate

 

COOK:

Over medium-low heat, stir vigorously the sweetened condensed milk, powdered cocoa, margarine and ground peanuts.

Cook the mixture for about 10 minutes until it thickens enough to show the pan bottom during stirring.

Pour the mixture in a greased dish and let it cool to room temperature. Take small amounts of the mixture with a teaspoon and make 1 ½ inch cone shaped candies.

Roll the cones over granulated sugar and stuck a peanut halve on the cone bottom to decorate.

 

Hint: Grease your hands with margarine to make the cones easily.

 

SERVE:

Place the cones in candy cups to serve.

They are great for birthday parties.

 

 

SERVING SIZE: 30 candies.

Brazilian Recipes II

First of all I'd like to thank all of you my wonderful friends for the great support you gave me. MSN took care of the guy who was bugging some girls (including me). We won't see him around anymore.
Now I'm having several problems with my DSL service, so if I'm not answering to you, it's not because I don't want, but because I cannot keep my conection enough time to do it.
Now, a week and one day delayed, here comes the next post about Brazilian Yummy Cookery.

Quentão de Vinho

Wine Quentão

(quentão means very hot)

Ingredients:

1 bottle of wine, any kind

1 ½ quarts water

12 cloves

6 cinnamon sticks

2 lemons, sliced in thin rounds

2 red apples cut in cubes

½ small ginger

½ cup sugar

 Prepare:

Boil water, cinnamon sticks, lemon, apples and sugar for 30 minutes. Cover and let brew about 1 hour. Strains. Add the wine and serve hot.


 

Pão de Queijo

Cheese Rolls

Ingredients:

1 package dry, granular yeast or 1 cake compressed yeast

1 cup warm milk

2 tablespoons sugar

2 teaspoons salt

¼ pound butter

3 slightly-beaten eggs

2 cups grated Muenster or Swiss cheese

 
Prepare:

Dissolve yeast in warm milk. Add sugar, salt, butter and slightly-beaten eggs. Let stand 10 minutes, and then add beer and 3 cups of sifted flour. Stir with a wooden spoon until bubbles appear. Add the cheese. Cover and set in a warm place to rise. When batter has doubled in shape, cut it down with a knife and knead in another 3 cups sifted flour. Knead well and then add the extra sifted flour (from 1 to 2 ¼ cups) until you have a smooth, elastic dough that does not stick to the hands. Cover and let rise again.  Shape into butter horn rolls by dividing into portions that will roll out into rounds about 10 inches in diameter and 3/8 inch thick. Brush with melted butter and cut into 12 pie-shaped wedges. Roll up each piece beginning with the wide end, stretching dough slightly as you roll. Lay straight or in a crescent shape on a greased cookie sheet with tip underneath to keep from unrolling. Cover, set in a warm place again to rise. Brush with melted butter or an egg yolk slightly diluted with milk. Bake about 20 minutes in a preheated 375° oven. Yields approximately 48 rolls.

 

 

Quindins de Yaya

 Yaya or Iaia was the slaves’ way of addressing the young girls of the Big House, just as “Sinhá” – a contraction of “Senhora” – was used to address the mistress. The slaves also called the young girls “Sinhá Moça” which corresponds to “Missy”. Likewise, the masters were called “Sinhô” and their “Ioiô”.

The Quindim is a very sweet cupcake that was popular in the Big House of the sugar cane plantations in the North of Brazil. They were always available for either intimate meals or elaborate parties. Baked in small individual cupcake tins, such as the one for muffins, they are then inverted and served in the little paper cups frequently used in Brazil for serving many kinds of candies and cakes.

The Quindim is golden brown on top while the bottom is frozen, like gelatin.

 

Ingredients:

1 pound sugar

¼ pound butter

16 egg yolks

 

3 egg whites

1 grated coconut

Cloves

Cinnamon

Orange flower water

½ pound sifted all-purpose flour

 

Prepare:

Mix first eight ingredients very well and beat. Add flour and continue to beat thoroughly. Turn into buttered cupcake tins and bake in Bain Marie in 350° preheated oven. Yields 60.

Tropical Weather

Who is ever going to understand the weather in Brasilia? Anyway I love it! Today morning we were literaly cooking here. Such a boiling temperature. And now at the end of the afternoon it is raining... ICE... Yep, it is raining little ice stones, hahahaha. The girls had so much fun. Running outside with their rain coats. I love to see them playing in the rain. Maybe because when I was their age and use to live in Rio de Janeiro, I would always ask my mother to play outside during the first rainy days... I can still taste the salty drops between my lips. Yes salty, because of the sea. And the sweet scent of wet earth. Such an explosion of senses.Well, there are some new pics for you to enjoy.

How to recognize a Brazilian in USA?

 

 

They didn't know anything about bills until you came to the US.

 

They like Guarana better than Coke.

 

If someone tells them to be at a certain place at 1:00 p.m., they don't show up until 2:30 or 3:00 p.m.

 

They know who Xuxa and Pele are.

 

Their entire family goes to grandma's house on Sundays for a big family get together....even when those guys see each other everyday.

 

BBQ means steak, picanha, sausage, chicken wings, pork, rice, farofa, vinagrete sauce and samba.

 

They are the loudest people in the room.

 

They got a Brazilian flag hanging from your car's rearview mirror.

Brazilian Recipes

Now Saturday will be the official day for Brazilian Recipes on my Space. They say our recipes are one of the reasons for us to be SO HOT. If that is so...
You can also taste a bit of Brazil over there...

Caipirinha
 
 
 
 

INGREDIENTS

 

1 lime quartered

1 tablespoon of sugar

1 shot of cachaça *

1/2 Cup of ice cubes with water

 

PREPARE:

 

Place the lime and sugar in the bottom of a glass.

Using the handle of a wooden spoon, crush and mash

the limes. Pour the liqueur and ice. Stir well.

Add more sugar if you want.

 

SERVE

 

Makes 1 glass.

This is a summer drink to appreciate before eating.

Decorate the glass with a slice of lime.

 
 
* Cachaça: (Brazilian sugarcane liquor) also known as Aguardente, is a spirit distilled from sugarcane.
It is one of the most popular drinks in Brazil.

 

 

 

Bolinhos de Bacalhau 

Codfish Balls

 

 

 

INGREDIENTS

 

1 pound dried codfish

2 tablespoons butter

1/2 cup chopped onions

1/4 cup chopped parsley

Salt and balck pepper

1 cup milk

2 cups mashed potatoes

1/4 cup all-purpose flour

3 eggs

 

PREPARE:

 

1. Be sure to remove all skin and bones from de codfish.

2. Freshening codfish:  soak large pieces in cold water for 3 or 4 hours and change water every hour.Taste to see if most of the salt has been removed. If not, gently parboil.

3. Sauté in butter with onion, parsley, salt (if necessary and pepper, flaking with a fork as it sautées. Add milk, potatoes flour and eggs, lighly beaten. Mix well, check seasoning and let stand 10 minutes. Shape into balls or cakes and drop into hot oil.

 

SERVE:

 

Hot, plain or with sauce.  You can also pour some drops of lemon juice over it.

    Summer mornings

    Fantastically beautiful sunny mornings are showing up everyday since a week ago. Seems the summer is finally here. It is so gorgeous to see how life blooms in those days. Everything is thankful to the caressing arms of the sun and freshness of summer rains. In the early morning we can here this magic symphony of Nature. And the scents… Ah! The scents are explosive stimuli to joy and pleasure. Flowers, fruits, herbs, everything mixed with the perfect alchemy of mystical spirits. Now I’m going outside and take some picture to share with my dear friends. I hope I can warm your hearts and bring a sweet smile to your faces.

    First tooth

    My little Clara lost her first tooth... Oh Dear…I miss them so much. They were at the beach when Clara tried to open the valve of her bubble (those things they use in their arms so they can float when in the water) with her teeth. Then from this little tooth that was already lose, last only a piece of the root that was really bugging her. My mother took her to the dentist and there they made an agreement (the Dentist and my little flower). He said she should not fear because it would not hurt, but just in case… She should rest her arms on the arms of his chair and lift up the hand if she would feel any discomfort. Then he said she would need an anesthesia because the tooth was still a bit attached to the root. She agreed and when he gave the injection the first lift up the little hand and then she cried… But not hard, just a bit. The dentist and my mother got so proud of her. She was a very brave little girl. Then she came back home carrying her tooth and saying she would place it right under her pillow, so the Tooth’s Fairy would bring her a coin to trade for it.     New year

     

     

    Why is that that we have renewed forces when we start a new year? But the thing is that, it really works… January and February are the limit date for some projects I have in my mind. If it doesn’t work I’m going to start looking for other alternatives. But for now, that is it. I have to keep my mind straight and focused.

     

     

    January is also a good month because I’ll have my girls back home. God, I miss them! For years we wonder if we want or not to have children and when they come… Well, when they come you quickly realize your life has no sense without them.

    So this week is still an awakening for me… Let’s see what’s coming next. Faith and courage!

    My feelings about these remaining days to the end of the year are good, I guess. It was a very tough year, with many obstacles I could pass through, but not without scars. Now I feel like 2006 is a year of recovering, recharging my batteries. It’s a year to take care of myself. To come back in shape, take care of my skin, come back to do all girly stuff I love so much and didn’t have any time or money to do so.  I feel tired and destroyed for the battles, but pleased with the results anyway. Now it’s time for harvesting the time and peace to take care of myself. So, I’m pretty sure it’s going to be another tough year, but now I’ll be working on my self-esteem. I already feel good about it. I’m that kind of person who always falls in a bad cycle of depression because of my weaknesses. So I’m working to break the cycle now. And I know I’ll be successful. It is just a matter of rhythm.  Routine for everything and little prizes for every new conquer.

    My Brazilian Drink from every morning...

    Chimarrão or cimarron is a South American traditional ethnic beverage.

    Since I'm a gaúcha, this is my every day drink from the morning. It is bitter, strong and hot. Smells like childhood for me. Brings me memories of my days with my whole family together. Sweet memories, warming my mornings.

     

     

     

    Chimarrão is a strong infusion prepared from yerba mate ("erva mate" in Portuguese) and very popular in Rio Grande do Sul (a state in southern Brazil) and neighboring countries. Its preparation requires some practice and a special gourd recipient called a "cuia" through a special metal straw called "bomba." It is usually drunk in groups, but in the same "cuia". People habitually drink chimarrão early in the morning or in the evening. There are some customary rules to drink it, such as:

    1. The person who prepares the chimarrão is the first one to drink.

    2. When one member of the group finishes his drink, he has to fill it up with hot water and offer it (while holding the "cuia" with the right hand) to the next person.

    3.You can't drink a half "cuia": it is necessary to drink everything before passing the "cuia" to the next person.

    Chimarrão is prepared as a tea with Ilex Paraguariensis herb; its origins come from the Guarani people.

    Thank you my friends... For waiting

    OK, so close to complete a month without any posts here am I… I hope you, dearest friends, can understand my over stress about many things that happened. Some were extremely sad, like the death of my dog, and some were upsetting, like realizing I’m about to complete 4 years without any vacations or holidays. My kids went on vacations to my mom’s house and they will stay there the whole month. I miss them like a piece of my body. Andreas, my love is doing everything he can to make me happy. And he is doing a great job here. I didn’t have time to feel lonely because he is always creating amazing stories for my amusement. Some things this man does are completely crazy, but I can only thank God for this angel in my life.

    Talking about angels made remember of my wounds, oh yep… Almost forgot to tell you. 2 days ago I was caressing my dog when I got the hugest bite I ever thought I could get. No, it was not my dog that bit me. It was a dog named Angel (more likely named by me as Devil). This bastard bit me just because he was jealous. He just came and attacked me. “Devil” was not supposed to be in my house, because as all of you should know, I don’t have bad educated animals. But since he is the same breed as Sissy (the remaining dog of Andreas), we decided do try and have some puppies from them. So I lent him from a friend for a month. In the end neither the dog got pregnant from him nor could I avoid my arm to get chewed by the beast.

    Anyway… Now I’m in forced brake time for at least a week because I cannot use my hand for any purpose. Not even to drive. Oh, yes! Talking about driving… There comes the cute news… My baby bought me a pink beetle as a Christmas present and I’m so very happy driving it around the city. Everybody waves at me and smiles, hahahaha.  He also gave me an awesome bike as a birthday present (so I can lose my extra pounds until the carnival) and I bought him a very special horse as Christmas present. The name of the horse is Safado (means Naughty in Portuguese). I want you all check the pictures in my album. We are having lots of fun with our presents.  Safado was a mistreated horse from a very bad man. The moment I saw him I fell in love with him. A skeleton... But so tame and sweet. I knew that would be the horse for my baby. I’m going to make him fat and strong and with his gorgeous colors he will be for sure the most beautiful horse around here.

    So tonight I want to thank all of you who never gave up on this crazy Brazilian here. I love you, crazy gringos! All of you!     

    CAIPIRINHA OF WINE

     

     

    INGREDIENTS:

    2 lemons

    4 tablespoon sugar

    ¼ cup white wine dry

    ½ cup crushed ice

     

     

    SERVING SIZE: 1 glass.

     

     

     

     

     

    The slaves in the colonial Brazil created the "Feijoada".

    They started cooking the pork meats that Farmland owners discarded such as ear, tails, feet in a big pot with black beans.

    This dish became traditional all over the country. Since then, the dish was incremented with pork sirloin and sausages that transformed the menu in a famous entrée that everybody who visit Brazil have to taste.

      

    The following recipe is an easy-to-do version of "Feijoada" made only with pork tenderloin and sausages.

    This recipe is preferred for busy people that  don't want to handle the salted pork ears,  tails and feet found in the complete "Feijoada".

    INGREDIENTS

    1 lb of varied pork sausages (prefer smoked sausages)

    1 lb of pork tenderloin

    some slices of bacon

    1 can of black beans (15.5Oz)

    2 tbs vegetable oil

    salt, garlic, chopped onions and bay leaves (bay leaves give a special taste to feijoada)

     

    PREPARE 

    Feijoada is made with black beans and pork meats.

    You can use a can of beans already cooked or learn how to cook in the recipe I posted right after this one.

    Add black beans to a medium-sized pot with 2 tbs oil, salt, garlic, chopped onions and about 6 bay leaves.

    Cook for about 15 minutes in med heat and set aside.

     

    In a separated panfry, cook cubes of pork tenderloin and slices of bacon with salt, garlic.

    Add all the sausages sliced and stir medium-heat until dry all the water.

    Add the cooked meat to the pan with the black beans and your feijoada is ready!

    Cook your feijoada more 10 minutes to meat soak in the black beans. You can add some pepper sauce to your feijoada at this point.

     

     

    Hint: to make the feijoada creamy, liquefy 1/2 cup of black beans in the blender and add to the feijoada.

     

    SERVE:

    Before serving the "Feijoada", you can serve a caipirinha as an appetizer.

    Feijoada is a main dish frequently served with white rice, collard greens and seasoned manioc flour (farofa).

    To follow the "Feijoada", we serve orange segments as a dessert.

     

    How to cook dried beans:

     

    It used to take hours to cook dried beans, not anymore. Using a pressure pan, you can cook red beans, pinto beans and black beans in 20 minutes.

    Always add seasoning after the beans are cooked.

    Count cooking time when the regulator starts to blow steam.

     

     

     

     

    Bolinho de chuva is traditional all over Brazil. It is served for breakfast or tea time. The recipe bellow is for the sweet version. You can also make a salty bolinho de chuva by replacing the sugar with one teaspoon of salt and some chopped green onions.

    Either way, sweet or salty they are delicious. When you deep fry them they get some crunchy peaks that are fun to eat. Bolinho de chuva means “donut of rain”. And they are best when fresh. So, if you want them for breakfast, prepare them in the same day, they are easy to do. You can have your Brazilian donuts done in about 30 minutes.

     

     

    INGREDIENTS

    1 cup all purpose flour

    1/2 cup corn starch

    2 tsp baking powder

    1/2 cup milk

    2 eggs

    4 tbs granulated sugar

    Pinch of salt

    Oil to deep fry or shortening.

    Sugar with cinnamon to sprinkle over.

     

    PREPARE

    In a large bowl, mix in the eggs, sugar and pinch of salt. While mixing with a wood spoon add the flour, corn starch, baking powder and milk until you get a batter similar to cake batter.

     

    Preheat the fryer to 350 degrees F, using two table spoons, take a spoon of batter and scrape off the batter into the fryer using the second spoon. Fry about six doughnuts each time until golden brown, about 3 to 4 minutes, flipping just once for overall browning. (The doughnut will flip by itself). Remove the doughnuts from the oil and drain on a paper towel-lined plate. Sprinkle with powdered sugar with cinnamon and serve.

     

    Hint: The fryer temperature is very important. If it is too hot, the doughnuts will burn outside and be doughy inside.

     

    Makes about 25 doughnut balls. Kids will love it.

    Roll the balls over chocolate jimmies to decorate.

     

    Hint: Grease your hands with margarine to make the balls easily.

    If the balls don't hold the shape and flat down like coins, it means that you did not cook enough. Cook additional five minutes, take a small sample and dip it in a glass with cold water. If you cooked enough, this sample should hold the shape after cooling down in the water.

    This candy is named after a renowned Brazilian politician of the 1920's, Brigadeiro Eduardo Gomes. He was an Air Force brigadier general who first gained notoriety for playing a part in quashing a communist coup in Rio. He later ran unsuccessfully for the presidency in 1946 and 1950, during a brief breeze of democracy which blew after WWII in Brazil.

    The name of the candy is that of his rank, Brigadeiro. Now, why would anyone name candy after an army general?

    Well, back in 1922, he was tall, dark-haired with blue eyes. AND SINGLE!!!

     

     The Brigadeiro campaign slogan was “Vote  Brigadeiro who is handsome and single”.

     

    Or the other version  “Brigadeiro Brigadeiro, he is better because he is single”.

      

    Then, this candy was created by some ladies from Rio de Janeiro. And they named the candy after the Brigadeiro. This was a time of shortage of traditional imports such as nuts and European fruits because of the WWII. But in the same time, Nescau ™ was introduced in the country.

    Therefore, one might say that the creation and success of this candy was a combination of opportunities. The multinational who introduced chocolate powder, had the help of cookers who named it after a famous politician and the need of the time to find replacement to traditional imported sweets.

     

    Today, brigadeiro candy is a must have in any birthday party and kids love them.

     

    In time, Brigadeiro Eduardo Gomes lost the presidential campaign to Marechal Eurico Gaspar Dutra, who was not that handsome.

    Moreover, as far as we know, there is no candy named after Marechal Dutra. Which shows once more how Brazilian women can be naughty, but they are not stupid.
